Zhanglu Shaomai — A Century-Old Culinary Heritage

With over 100 years of history, Zhanglu Shaomai is a celebrated intangible cultural heritage dish, renowned for its exceptional craftsmanship and rich flavors. A popular local saying captures its legacy: “Shaomai originated in Zhanglu Town, its craft spread to Harbin. Once a beloved delicacy, now even more irresistible.”

The artistry of Zhanglu Shaomai lies in its meticulous preparation. The wrapper, made from high-quality wheat flour using a scalding technique, is thin yet resilient, tender yet slightly crisp. The filling consists of fresh, locally sourced lamb from young mountain goats, finely minced and blended with scallions and ginger for added flavor. Seasoned with salt, pepper powder, soy sauce, and sesame oil, the mixture is thoroughly stirred to ensure every morsel of lamb is infused with flavor. True to tradition, the Shaomai is wrapped open at the top, resembling a delicate pomegranate blossom.

Freshly steamed Zhanglu Shaomai is piping hot and aromatic.
